Because we have an abundant veggie garden and because I like veggies for lunch I always cook more when making dinner - to have left overs for lunch. Many people cringe when I tell them I eat cold right out of the fridge but “have they tried it?”. anyway, when dinner rolled around I still had a lot of broccoli flowerette and was tired of steamed plain so decided to concocked something. I knew I had some frozen spaghetti noodles I didn’t use up from last italian dish (they were in a hunk so I nuked in microwave for a minute to break up -broke off a hunk about equal to the amount of broccoli, mixed them together, cracked open a jar of my favorite spaghetti sauce (Ragu chunkie) and poured some on top, zapped till hot then sprinkled some parmesan and shredded italian cheese mixture on top, zapped again for 2 or so minutes til cheese was melted. It was very tasty and went well with ham we had. I will eat the rest for lunch today.
